Why you'll love this recipe

  • Easy to make
  • Simple ingredients
  • Total nutrition

Ingredients

  • 2 scoops Infi Matcha all-in-one
  • 3 bananas
  • ½ cup melted coconut oil
  • ½ cup organic sugar
  • 1 cup flour
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350°F and line a baking tray with parchment paper. Mash 2 bananas in a large bowl, then mix in the melted coconut oil and sugar.
  2. Add the Infi Matcha, flour and baking powder, and mix until a soft, slightly sticky dough forms.
  3. Scoop 2 to 3 tablespoons of dough per cookie onto the tray, flatten with a spoon, press a slice of the third banana on top, and bake for 12 to 15 minutes until the edges are set.

One tip

Pull them while the centres still look underdone. They firm up as they cool.
